Will it actually keep my fingers safe?
Yes. The spiked food holder grips the veg from the top — your hand pushes the holder, not the food itself. The blade physically can't reach above the holder's base. As long as you use it (and you should, every time), your fingers stay clear.
How sharp do the blades stay after a few months?
The blades are hardened stainless steel, not the soft white edge most cheap mandolines use. Hand-washing instead of dishwashing keeps them sharpest — the dishwasher works fine, but heat cycles dull any blade faster.
What can I actually slice with it?
